1Everest is Anjali's dream and passion. She has lived with the coldness of her father her entire life and that would hurt anyone. This was her only chance as Anjali Rawat to make her way in her fathers heart, make him feel proud (whether he deserves it or not is a different matter). Aakash is the stability factor in this journey, he keeps her calm and doesn't let her confidence go down. I think she would be very lost if he wasn't on this expedition.
I have a picture in my mind, Anjali looking towards Everest with Aakash in the background. He's always there to hold her whilst she marches towards her dream and that's what makes their relationship beautiful. It's the most perfect sub-plot I've seen in a long time.
Btw the dialogues from Shikha Maa especially 'Sabki apni ek kahaani hoti hai...door se jinki kismat achi dikhti hai, paas jaake dekho wahan bhi kuch khaami hai' define Anjali to the T. It's such a human sentiment. There's always cracks in the picture perfect image.

Shikha Ma's words are so true and so wise!
The grass always seems greener on the other side.Lives of others always seems perfect when seen from a distance. Its only when you have walked a mile in their shoes that u can understand that their life isnt perfect either.Anjali has been deprived of something most basic in any person's life, her father's love and recognition and shes going to risk her life to get what she has been denied from birth. Roshan doesnt know what Anjali does not have, she only sees what Anjali does have and that is Akash's love.
